Abstract
A study on the supply of lime in water tanks for sturgeon breeding was carried out in
Biganos, a town situated in the south-west of France, from March to May 2023. It studied 2
species Acipenser baerii and Acipenser gueldenstaedtii. The objective of the study is to improve
the quality of the caviar and the quality of the water. It also allowed the analysis of the various
impacts of the addition of lime on sturgeon and its environment. Three elements have been
highlighted for quality (visual, texture and size), skeleton reinforcement and also water quality.
For this purpose, the liming system was used in identical tanks in terms of water volume (9m3),
water supply and stocking density (31.01 kg/m3). The results obtained show an improvement
of the visual quality of 317%, of the texture of 213% and an increase in the number of sturgeons
with larger eggs of 139%. For the specie A.baerii the skeleton reinforcement rate is of 60% and
of 70% for the specie A.gueldenstaedtii. Metal precipitation such as iron and aluminum was
observed but the quantity was not measured. Further research on the effects of lime should
allow us to know when and for how long the use of this system would be the most interesting
depending on the objectives.
